Greek Salad With Non-Dairy Option

Great for celebrating our victory over the Greeks on Chanukah! It is also customary to eat dairy foods on Chanukah in commemoration of the miracle when Yehudis gave the Greek general cheese and wine to make him fall asleep and then killed him.

If you or your guests are allergic to dairy, this recipe includes a non-dairy version of “Feta cheese”.

Ingredients:

  • Romaine Lettuce, checked for bugs according to your rabbi’s instructions
  • Red Onion, sliced
  • Green Bell Pepper, sliced
  • Cucumber, sliced
  • Grape Tomatoes
  • Olives, mixed with olive oil as is the custom
  • Ground Oregano and Pepper
  • Minced Garlic
  • Chalav Yisroel Feta Cheese (remember that after feta cheese you have to wait six hours before eating meat because it is an “aged” cheese) OR Almond Flour, Lemon, Salt and Water for a non-dairy version

Instructions:

Tear lettuce into pieces. Toss with onion, green pepper, cucumber, tomatoes, olives, spices and garlic. Top with crumbled feta cheese. For non-dairy feta cheese, mix almond flour with lemon juice and salt and add water gradually until you reach the right consistency. Crumble mixture over salad to resemble feta cheese crumbles.
