An easy and healthy alternative to potato Latkes.
Ingredients:
- 1 Bag Matchstick Carrots
- 5 Eggs (checked for blood spots in a clear cup)
- Salt and Pepper to taste
- 2 Cups Flour
- Oil for frying
Instructions:
Heat oil in a frying pan. Mix all other ingredients together. Put spoonfuls into hot oil. Let fry until they can be flipped, then fry for a few more minutes on the other side.
