On a recent Shabbat, I swapped our usual cheesecake for muffins! Preheat oven to 220°C. Combine 1 cup bran cereal in 1 cup plant milk. In another bowl, mix 1 egg, 4 oz applesauce, 1 cup spelt flour, 1 tsp baking powder, half tsp baking soda, salt, and ⅓ cup honey or sugar. Combine, fill muffin tins, and bake 20 minutes.
