This recipe is great for Rosh Hashanah since it gives the chicken a sweet flavor – for a sweet new year!
Ingredients:
- 1 Fresh Pineapple
- 1 Onion
- Olive Oil
- Pieces of Chicken
- Salt
Instructions:
Peel pineapple (peel it completely to ensure that there are no bugs) and remove the tough inner core. Chop into chunks, put into a food processor and grind until it’s liquefied.
Chop onion and sauté in a little olive oil until soft and lightly browned. Mix the sautéed onion with the pineapple.
Arrange pieces of chicken (I like to remove the skin from the chicken) in a large baking pan. Sprinkle salt on the chicken. Pour the pineapple/onion mixture over the chicken. Cover the pan and bake in the oven at 275° for about 2 hours.
