Cooking Tip of the Week
Start with 8 cups of crisp, fresh spinach or curly lettuce in a large bowl. Combine a bit of extra virgin olive oil, 2 tbsp balsamic vinegar, and crushed garlic. Heat 1 tbsp olive oil, add thickly sliced mushrooms, and cook until golden brown. Add 1/4 cup sliced green onion and sauté till soft. Stir in the dressing, simmer, pour over greens, toss, and top with 1/3 cup crumbled feta cheese. Enjoy!
