Cooking Tip of the Week Honey Cake

Honey cake is not just for Rosh Hashana. Mix 3 1/2 cups of pre-sifted spelt flour, 1/4 tsp salt, 1 1/2 tsp baking powder, 1 tsp baking soda, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp cloves and 1/2 tsp ginger. Beat 4 eggs and 2 cups of dark honey, adding 4 tbl neutral oil and 1/2 cup strong coffee. Gradually add to the flour mixture. When well mixed pour into sprayed and floured pans. Bake in a preheated oven at 150C for about 50 minutes.
