Ingredients:
2 Zucchinis
2 Yellow Squashes
1 Bag Matchstick carrots
Salt and Black Pepper to taste
1 Cup Almond Flour
9 Eggs, checked for blood spots in a clear cup
Oil to taste
Instructions:
Boil zucchinis and yellow squashes until soft. Mash. Mix in carrots. Add eggs, oil, salt, pepper and almond flour. Bake until eggs are set, or longer if you prefer, or cook covered on low heat.
