Why We Eat Hamantashen On Purim

Harav Yaakov Kamenetsky zt”l (cited in B’mechitzas Rabbeinu page 142) said the reason for eating hamantashen on Purim is that the consumed item is destroyed. When one eats a hamantash he is in essence fulfilling the obligation of erasing Amalek since we are getting rid of Haman (Amalek) by eating a hamantash.
