It is not explained what act of chesed and trustworthiness is supposed to be remembered. These words indicate a known item to be remembered. However, the Medrosh Rabbah (Parshas VaYeitzei) states that G-d remembered Rochel and Sarah when they were barren. Thus, חסדו refers the kindness done to Avrohom (חסד לאברהם) and אמונתו refers to faithfulness done to Yaacov(תתן אמת ליעקב).

Chaza”l established “signs” for us to better understand Torah. For example:
- תת רומם ישרים
- תתב רך צדקים
- תתקדש חסידים
- תתה לל קדושים
תפילת ב וקר (שחרית) אברהם
תפלת צהרים (מנחה) יצחק
תפלת ערבית (מעריב) יעקב
ישבעו ויתענגו מטובך (בעמידת שחרית שבת)
Apparently, one first has delight in a matter, and afterwards is satiated. However, the spiritual delight and satiation is different from their physical counterparts. After engaging in physical delights (such as eating, drinking, etc.) one achieves satiation which ends the physical desires. Regarding spiritual delights (such as learning Torah) one can obtain satiation and still continue to engage in additional spiritual delights without limit.
And this concept is referenced in the above cited segment. When one engages in spiritual goodness (learning Torah) even after achieving satiation, one can engage in additional learning and continue to delight from His goodness.
Regarding Shabbos, the Gemara (Shabbos 118b) states that all who delight in Shabbos receives a reward without limits like it is written regarding Yaacov (Parshas VaYeitzei) “You will spread out to the west, to the east, to the north and to the south.” Again, this refers to spiritual delight in Shabbos that one achieves a blessing without limits. (as opposed to a physical delight which has limits).
