With the kids home you might need extra cookies. Mix together 1 cup of your favorite flour, 1/2 c cocoa ,1 tsp baking powder and 1/4 tsp salt. Cream together 3/4 cup sugar (white, brown, or coconut) with1/4 cup neutral oil. Add 2 eggs and vanilla to taste. Add dry mixture and form into ball. Wrap with plastic wrap. Refrigerate for 24 hours. Preheat oven to 180C. Unwrap the dough and form into small balls. Roll the balls in powdered sugar (a great job for the kids). Bake in pan covered with baking paper for 10 minutes. Cool and take off.
