Ingredients:
- 1 Zucchini
- 1 Eggplant
- 1 Tomato
- 2 Tablespoons Minced Garlic (can be from a jar)
- Olive Oil
- Salt, Hot Red Pepper Flakes and Ground Oregano to taste
Instructions:
Cut vegetables into half-circles. Sauté in olive oil with garlic and spices until soft (in covered pan). Delicious with pasta.
