Ingredients:
Dark Meat Chicken
Mina® Moroccan Pitted Green Olives
Olive Oil
Tomato, diced
A Few Spoonfuls Minced Garlic
Turmeric, Coriander and Cumin to taste
Instructions:
Pour olives, together with their liquid, into a pan and mix with olive oil. Add tomatoes, garlic and spices. Cook covered until chicken is done, then uncovered for a while to reduce liquid. Serving suggestion: Cut zucchini and sweet potato into large chunks and cover with water. Season with salt, turmeric, coriander, cumin and a drizzle of olive oil. Cook until vegetables are soft, then prepare one package of couscous by adding it to the boiling water. Serve chicken over the couscous and vegetables.
