Tangy Vegetable Salad

Ingredients:

  • 2 Potatoes
  • 4 Carrots
  • 2 Onions
  • Juice of 2 Lemons
  • Coarse Salt to taste (checked on a white plate according to the Passover custom)

Instructions:

Peel and dice vegetables. Simmer in lemon juice with salt until cooked but still somewhat firm. Let cool and serve cold.
