Kosher Recipe Eggplant with Fresh Peppers

I usually sauté the peppers and garlic, but last week I didn’t have time to do it before Shabbos, and I think it came out better that way! Keep Shabbos – it tastes better!
Ingredients:
- Roasted Eggplant
- 4 Cloves Garlic, minced
- 3 Colored Bell Peppers
- Olive Oil to taste
- Salt, Pepper, Oregano and Crushed Red Pepper Flakes to taste
Instructions:
- Remove tops and bottoms of bell peppers.
- Cut in half widthwise, then cut into strips.
- Mix with all other ingredients.
