Kosher Recipe Eggplant with Fresh Peppers

I usually sauté the peppers and garlic, but last week I didn’t have time to do it before Shabbos, and I think it came out better that way! Keep Shabbos – it tastes better!

Ingredients:

  • Roasted Eggplant
  • 4 Cloves Garlic, minced
  • 3 Colored Bell Peppers
  • Olive Oil to taste
  • Salt, Pepper, Oregano and Crushed Red Pepper Flakes to taste

Instructions:

  1. Remove tops and bottoms of bell peppers.
  2. Cut in half widthwise, then cut into strips.
  3. Mix with all other ingredients.
