Almond powder adds volume and protein to eggs without adding a lot of fat or cholesterol. Almond powder has less fat and more protein than almond flour.
Ingredients:
- Olive Oil
- 18 Eggs, checked for blood spots in a clear cup
- Half a Jar Barney brand Almond Powder
- 1 Cup Water
Instructions:
Heat olive oil in a pan. Add eggs and scramble. Add almond powder and water and scramble again, mixing very well until powder is dissolved. Cover and cook until solid. Or bake in the oven.
