Sharlotka is a simple apple cake. Slice 3–4 apples (about 680 g) and toss with the juice of ½ lemon. Place in a baking dish. Mix 3 eggs, ¾ cup coconut sugar, vanilla, ¼ tsp sea salt, and 1 cup spelt flour until light. Pour over apples and bake at 180°C for 45 minutes. Preheat oven. Cool before serving.
